“Katie” will air live at 2 p.m. weekdays on WESH-Channel 2. The talk show will have a studio audience and be produced in New York.
In the premiere, Simpson talks about the birth of her first child and her efforts to shed weight after delivering. Grammy winner Crow will discuss her recently diagnosed brain tumor.
The Sept. 11 show will have Aimee Copeland, the Georgia graduate student who discusses surviving the loss of parts of all her limbs to flesh-eating bacteria. She will walk on the “Katie” stage, the show said.
The Couric show also has lined up Barbra Streisand, who will discuss heart disease in women, an issue that has spurred the singer’s activism. Streisand also talks about returning to Brooklyn for a concert performance for the first time in 50 years.
Other Couric guests include Jennifer Lopez, who talks about leaving “American Idol”; Heidi Klum, the host of “Project Runway”; Oscar winner Susan Sarandon; late-night host Chelsea Handler; daytime host Wendy Williams; and Emmy nominee Sofia Vergara of “Modern Family.”
More guests: Author EL James talks about the success of the “Fifty Shades of Grey” trilogy; Demi Lovato discusses being a judge on “The X Factor”; and professor and motivational speaker Brené Brown, author of “Daring Greatly.”
Raffaele Sollecito, the former boyfriend of Amanda Knox, “talks for the first time on American television about the murder case that made international headlines, life after his ordeal in an Italian prison and his reunion with Amanda,” the Couric show said.
Couric will explore dating violence with Sharon and Lexie Love, mother and sister of Yeardley Love. Yeardley, a lacrosse-student athlete, was murdered by a former boyfriend at the University of Virginia.
